Cranberry Company Meatballs

  1. Mix ground beef in a large bowl with the cornflake crumbs, parsley, eggs, soy sauce, black pepper, garlic, ketchup and onion.
  2. Form mixture into balls about the size of walnuts and arrange in rows on a cooling rack set inside an 11 x 13 cookie sheet to allow for the fat to drip off (using the rack is optional, but I think they come out better this way and are healthier).
  3. Place meatballs in a 350 degree F oven for 35-45 minutes or until lightly browned.
  4. While meatballs are cooking prepare the sauce.
  5. In a medium saucepan combine the cranberry sauce, chili sauce, brown sugar and lemon juice.
  6. Cook over medium-low heat until cranberry sauce is melted and mixture is smooth.
  7. Pour sauce over cooked meatballs and stir to cover the meatballs, then serve hot.
  8. You can keep them in a crockpot for appetizers or theyre really good over brown rice too.
  9. Enjoy!
