Big plate chicken mince
- 500 grams chicken mince
- 500 grams potatoes
- 1 pinch bay leaf
- 1 medium cinnamon
- 3 clove star anise
- 2 medium spring onion
- 1 pinch dry chillies
- 1 dash Dark soy sauce
- 2 dash Light soy sauce
- 2 tbsp Sugar
- Dice Potatoes into 1cm cubes, rough chop spring onion and dry chillies.
- Heat oil in the wok.
- Melt 2 Table spoons of sugar, until browned.
- Stir Fry chicken mince with melted sugar until cooked.
- Add All the spices, stir further 5min.
- Add Dark soy sauce for color and light soy sauce for flavor.
- Add Diced potatoes and a cup of water, mix well.
- Cover Lid simmer until potatoes are soft.
- Open Lid until water almost cooked off.
- Serve With steamed rice.
