Chocolate Ice-Cream Sandwiches

  1. Preheat oven to 180C/160C fan forced.
  2. Line 2 large baking trays with baking paper.
  3. Process flour, honey, sugar, egg whites and margarine until combined.
  4. For each biscuit, place 1 teaspoonful of mixture on prepared tray; spread to a 5cm circle.
  5. Bake for 8-10 minutes or until golden brown, swapping trays halfway through cooking.
  6. Let biscuits cool on trays (biscuits will be crisp on cooling).
  7. Sandwich biscuits with ice-cream.
  8. Place in the freezer for 15-20 minutes to set.
  9. Drizzle biscuits with melted chocolate to serve.
