Chocolate Ice-Cream Sandwiches
- 14 cup plain flour
- 2 tablespoons clear honey
- 2 tablespoons caster sugar
- 1 egg white
- 2 tablespoons butter, melted
- 200 g low-fat ice cream
- 100 g dark chocolate, melted, to serve
- Preheat oven to 180C/160C fan forced.
- Line 2 large baking trays with baking paper.
- Process flour, honey, sugar, egg whites and margarine until combined.
- For each biscuit, place 1 teaspoonful of mixture on prepared tray; spread to a 5cm circle.
- Bake for 8-10 minutes or until golden brown, swapping trays halfway through cooking.
- Let biscuits cool on trays (biscuits will be crisp on cooling).
- Sandwich biscuits with ice-cream.
- Place in the freezer for 15-20 minutes to set.
- Drizzle biscuits with melted chocolate to serve.
