Baked Curried Turkey And Rice Recipe
- 1 c. water
- 8 ounce canned tomatoes (1 can)
- 3/4 c. quick cooking brown rice
- 1/4 c. dry apricots snipped
- 1/2 c. raisins
- 1 Tbsp. lemon juice
- 2 tsp curry pwdr
- 1 tsp chicken bouillon granules instant
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 2 x cloves chopped
- 1 x bay leaf
- 3/4 lb turkey breast, boneless and skinless or possibly chicken cut 1 inch pcs
- In a medium saucepan stir together water, undrained tomatoes, rice, apricots, raisins, lemon juice, curry pwdr, bouillon granules, cinnamon, salt, garlic, and bay leaf.
- Heat to boiling.
- Stir in the turkey or possibly chicken.
- Pour the warm turkey mix into a 1-1/2 qt casserole dish.
- bake, covered in a 350 degree oven about 45 min or possibly until rice is tender and turkey is no longer pink, stirring occasionally.
- Remove bay leaf, then serve.
