Purple Sweet Potato Gnocchi
- 2 Medium Purple Sweet Potatoes
- 1 whole Egg
- 1/4 teaspoons Salt
- 1 cup Whole Wheat Flour
- 1/2 Small Yellow Onion, Roughly Chopped
- 1 clove Garlic, Minced
- 1 teaspoon Olive Oil
- 1 Sweet Potato (a Normal One)
- 2 teaspoons Sage
- 1/4 cups Grated Parmesan Cheese
- 2- 1/2 cups Milk
- Cook the sweet potatoes by microwaving them for about 10 minutes, or until soft.
- Microwaving time will vary depending on the power of your microwave and the size of the potatoes.
- Set the regular sweet potato aside for the time being.
- In a large bowl smash the purple sweet potatoes well.
- Mix in the egg, salt and flour to form a Playdough-like dough.
- Divide the dough into four equal-sized sections.
- Roll each piece into a rope about an inch in diameter.
- Cut each rope into pieces that are about 1/2 an inch thick.
- In a small saucepan over medium heat, saute the onion and garlic with olive oil until soft.
- Place onions and garlic in a food processor.
- Add the regular (not purple) sweet potato, sage and Parmesan.
- Puree until smooth and set aside.
- Bring the milk to a boil in a small saucepan.
- Toss the gnocchi, 10 or so pieces at a time, into the milk to cook.
- They will rise to the top of the milk when they are done.
- Fish them out with a slotted spoon and place them in a colander to drain fully and cool slightly.
- Repeat until youve cooked all of the gnocchi.
- When you are done, remove the pan from the heat and save the cooking mik.
- After the gnocchi are cooked, mix 1 cup of the reserved milk into the sweet potato sauce.
- Serve the gnocchi topped with the sweet potato sauce while everything is still warm.
