Ginger-Jalapeno Slaw
- 13 c. seasoned rice vinegar
- 2 tbsp. olive oil
- 2 tsp. grated, peeled fresh ginger
- 1/2 tsp. salt
- 2 jalapeno chiles
- 1 lb. green cabbage
- 1/2 lb. red cabbage
- 3 medium carrots
- 2 green onions
- 1 c. thinly sliced kale
- In large bowl, whisk vinegar, oil, ginger, salt, and jalapenos until blended.
- Add green cabbage, red cabbage, carrots, green onions, and kale; toss well to coat with dressing.
- Cover and refrigerate coleslaw 1 hour before serving to allow flavors to blend.
