Pasta Casserole
- 2 c. tomato-basil sauce
- 1 can caponata (eggplant relish)
- 1 can solid white tuna in water
- 8 oz. penne
- 1 c. mixed shredded cheese (mozzarella, Parmesan, Romano)
- Heat oven to 375 degrees F. In 2- to 2 1/2-quart shallow baking dish, mix tomato sauce, caponata, and tuna.
- Add penne and toss to coat with sauce.
- Bake 20 minutes.
- Sprinkle with cheeses and bake 5 to 10 minutes, until melted.
