Potato Carrot Steamed Pudding Recipe

• 1 c. shredded potato
• 1 c. shredded carrot
• 1 c. grnd suet
• 1 c. raisins, cut up
• 1 c. sugar
• 1 c. flour
• 1 teaspoon soda
• 1 teaspoon cinnamon
• 1 teaspoon nutmeg
• 1 teaspoon salt
• 1 tbsp. buttermilk or possibly sour lowfat milk

1. Mix all ingredients to a stiff batter.
2. Pour batter into a well greased mold and steam for 2 1/2 hrs.
3. Serve with hard sauce.
