Tossed Caprese W/Sun-Dried Tomatoes & Olives
- 34 cup large leaf italian basil, chopped
- 3 cups ripe grape tomatoes, halved
- 16 ounces fresh mozzarella cheese
- 34 cup sun-dried tomato, chopped
- 34 cup kalamata olive, chopped
- 4 tablespoons extra virgin olive oil
- 3 tablespoons balsamic vinegar
- 2 teaspoons sugar
- 14 teaspoon salt
- 14 teaspoon coarse ground pepper
- Combine in salad bowl, grape tomatoes, fresh mozzarella, basil leaves, sun-dried tomatoes and kalamata olives.
- Prepare dressing in a separate bowl.
- Whisk together oil, pepper, sugar & salt.
- Drizzle the vinegar into the mixture and whisk again.
- Add the dressing to the salad.
- Toss salad then serve.
