Italian Eggs

  1. Cook zucchini, onion, sweet pepper, and garlic in hot oil until onion is tender, cool slightly.
  2. Combine egg whites, whole egg, milk and Italian seasoning in a medium mixing bowl; mix well.
  3. Stir in cooked vegetables.
  4. Pour in four individual (about 4 1/2 inch diameter) ramekins.
  5. Bake at 350 degrees for 15-20 minutes or until set.
  6. Sprinkle each serving with mozerella cheese.
  7. Let stand 5 minutes before serving.
