Broccoli Cheese Soup

  2. Saute onion in butter.
  3. Set aside.
  4. 2.
  5. Cook melted butter and flour using a whisk over medium heat for 3-5 minutes.
  6. Stir constantly and add the half & half.
  7. 3.
  8. Add the chicken stock.
  9. Simmer for 20 minutes.

  11. Add the broccoli, carrots and onions.
  12. Cook over low heat 20-25 minutes.
  13. 5.
  14. Add salt and pepper.
  15. Can be pureed in a blender but I don't.
  16. Return to heat and add cheese.
  17. Stir in nutmeg.
