Sweet &Sour Chicken
- 2 large Chicken breasts
- 1 can Pineapple (you could always use fresh)
- 1 large Red bell pepper
- 1 large Yellow bell pepper
- 1 clove Chopped garlic
- 3 tbsp Light brown sugar
- 4 tsp Corn starch mixed with 4 teaspoons cold water
- 3 tbsp Rice wine vinegar
- 1/4 cup Chicken stock
- 2 dash Dried red pepper
- 1 Salt & pepper
- 3 tbsp Oil
- Take a large skillet, add oil heat it up.
- Add chicken (cut into strips or chunks) with chopped garlic and lightly brown.
- Removed chicken and add chopped red & yellow bell peppers cook for 1 minute until soft.
- Then bring to simmer the brown sugar, pineapple juice, pineapple chunks & rice wine vinegar (can sub white wine vinegar) & chicken stock.
- Once reduced add the corn starch mixture slowly but keep stirring.
- Then add the chicken strips and cook for 5 minutes.
- Serve over rice'(Hint: you could top with bottled sweet and sour for an extra kick)
