BBQ Chicken & Eggplant Triangles

  1. Heat oil in large non-stick frying pan and saute onion until tender.
  2. Add spinach and cook until wilted.
  3. Remove from heat and place in a bowl along with eggplant dip, chicken and cheese.
  4. Mix until well combined.
  5. Spoon tablespoons of mixture into the centre of each pastry square.
  6. Lightly brush the edges with egg and fold pastry over to form triangles.
  7. Pinch edges together to seal.
  8. Place parcels onto lined baking trays and brush outsides with egg.
  9. Bake in a hot oven 220C for 15 minutes until golden.
  10. Remove and serve.
