BBQ Chicken & Eggplant Triangles
- 2 teaspoons olive oil
- 1 onion, finely chopped Safeway 3 lb For $2.99 thru 02/09
- 100g baby spinach leaves
- 1/3 cup eggplant dip
- 1/2 large BBQ chicken, meat removed and roughly chopped Safeway 1 lb For $1.99 thru 02/09
- 1/2 cup grated KRAFT Tasty Cheese
- 4 sheets puff pastry, each cut into 4 squares
- 1 egg yolk
- Heat oil in large non-stick frying pan and saute onion until tender.
- Add spinach and cook until wilted.
- Remove from heat and place in a bowl along with eggplant dip, chicken and cheese.
- Mix until well combined.
- Spoon tablespoons of mixture into the centre of each pastry square.
- Lightly brush the edges with egg and fold pastry over to form triangles.
- Pinch edges together to seal.
- Place parcels onto lined baking trays and brush outsides with egg.
- Bake in a hot oven 220C for 15 minutes until golden.
- Remove and serve.
