Brown Rice And Black Bean Burrito (Usarice) Recipe
- 1 Tbsp. vegetable oil
- 1 med onion, minced
- 2 x cloves garlic, chopped
- 1 1/2 tsp chili pwdr
- 1/2 tsp cumin
- 3 c. cooked brown rice
- 16 ounce cooked black beans, approximately liquid removed and rinsed
- 11 ounce corn kernels, liquid removed
- 6 med flour tortillas 8-inch
- 6 ounce cheddar cheese, shredded Or possibly 3/4-c. shredded
- 2 x green onions, thinly sliced
- 1/4 c. plain nonfat yogurt
- 1/4 c. prepared salsa
- Directions:Heat oil in large skillet over medium-high heat till warm.
- Add in onion, garlic, chili pwdr and cumin.
- Saute/fry 3 to 5 min till onion is tender.
- Add in rice, beans and corn; cook, stirring 2 to 3 min till mix is thoroughly heated.
- Remove from heat.
- Spoon 1/2 c. rice mix down center of each tortilla.
- Top each with 2 Tbsp.
- cheese, 1 Tbsp.
- green onion and 1 Tbsp.
- yogurt; roll up, top with 1 Tbsp.
- salsa.
- Makes 6 servings.
