Poblano Chile Dinner
- 1 Poblano chile
- 6 tbsp Beans, refried
- 1/3 cup Potatoes, cubed
- 1/3 cup Onions, green and purple
- 1/4 cup Tomatoes, diced
- 8 tbsp Queso Cotija
- 1 Salt
- Blister Chile in a broiler
- Wait until cooled
- Peel off skin
- Slit open and remove seeds
- Cook potatoes in butter until browned to perfection
- Add onions to same pan and Carmelize with EVOO
- Warm refried beans and layer this first on chile
- Top with potato and onion mixture next
- Next place the diced tomatoes atop the ingredients already in place
- Lastly, top with cheese
- Enjoy!
