Poblano Chile Dinner

  1. Blister Chile in a broiler
  2. Wait until cooled
  3. Peel off skin
  4. Slit open and remove seeds
  5. Cook potatoes in butter until browned to perfection
  6. Add onions to same pan and Carmelize with EVOO
  7. Warm refried beans and layer this first on chile
  8. Top with potato and onion mixture next
  9. Next place the diced tomatoes atop the ingredients already in place
  10. Lastly, top with cheese
  11. Enjoy!
