Black & White Chili
- 1 lb chicken breast
- 1 large coarsely chopped onion
- 1 jalapeno pepper chopped
- 2 tbsp minced garlic
- 1 can black beans (drained)
- 1 can Great Northern white beans (drained)
- 1 can fire roasted tomatoes (Do not drain)
- 6 clove whole garlic
- 2 tbsp apple cider vinegar (optional)
- 2 tbsp Chili seasoning
- 1 cup low sodium chicken broth or water
- Cut chicken into 3/4 inch cubes
- Brown chicken; approx.
- 5 minutes
- Add onion, jalapeno, and minced garlic; cook for additional 2 minutes
- Transfer to slow cooker.
- Thoroughly rinse beans.
- Add beans, tomatoes, whole garlic, apple cider vinegar, & seasoning.
- Stir in broth or water.
- Set slow cooker temperature to low.
- Cook for 4-4 1/2 hours.
