Spanish-Style Garlic Shrimp

  1. In a bowl, add your shrimp, then add 2 tablespoons of olive oil, salt, and 2 cloves of minced garlic.
  2. Mix well to combine.
  3. Allow this to marinate at room temperature as you move through the rest of this process.
  4. Heat a large skillet to medium heat.
  5. Smash 6 cloves of garlic and add it to the skillet along with the remaining 6 tablespoons of olive oil.
  6. Cook the garlic until it becomes light brown, being careful not to go past this stage.
  7. The goal here is to make a nice garlic olive oil to be used in the next step of cooking the shrimp.
  8. Once the garlic is light brown, remove the cloves from the olive oil with a slotted spoon, and move the skillet off of the burner.
  9. Next, slice the remaining cloves of garlic.
  10. Return your skillet to a lower heat, and add in your garlic, the chili flakes, and the bay leaf.
  11. Cook this on low heat, being careful not to brown.
  12. This will begin to intensify the flavor of the garlic oil.
  13. Before adding your shrimp, bring the heat up to a medium-low temperature, and toss in your shrimp, creating an even layer in your skillet.
  14. Cook the shrimp for a couple of minutes, before turning them over to cook on the other side.
  15. This will not take very long.
  16. Add your parsley and sherry cooking wine, and give it a good flip.
  17. Transfer to your serving dish, and dig in.
  18. Not only did my son love this dish, but my daughter and wife did as well.
  19. The end result is a truly fantastic and delicious shrimp dish that is packed with a great garlic taste.
