Spiked Orange Chicken Breast
- 16 ounces chicken breasts, boneless and flattened slightly
- 14 cup orange juice, low calorie
- 3 tablespoons orange marmalade
- 14 cup mandarin orange, canned with juice removed and chopped
- 14 teaspoon ground cinnamon
- 14 teaspoon chili powder
- salt
- pepper
- Coat a skillet with non-stick cooking spray and bring to medium high heat.
- Season chicken with salt and pepper and add to the hot pan.
- Cook 3-4 minutes until lightly browned.
- Turn chicken and cook for an additional 2-3 minutes.
- Reduce heat to medium low and add all remaining ingredients.
- Cook 3-4 minutes until all ingredients are warmed, thickened, and well incorporated.
- Serve with the orange mixture.
