Thai Sweet Chili Sauce

  1. Prepare jars, lids and bands.
  2. In a pot, combine chile peppers, garlic, salt, sugar, rice vinegar and white vinegar.
  3. Bring to a boil over medium heat, stirring often until sugar and salt is dissolved.
  4. Increase heat to high and boil for 1 minute.
  5. Remove from heat.
  6. Stir in lime zest and juice.
  7. Pour into prepared jars leaving a 1/2" headspace.
  8. Remove air bubbles and adjust headspace if needed.
  9. Process jars in a boiling water bath for 10 minutes.
  10. Adjust time according to your altitude.
