Mediterranean vegetable puree recipe
- 100 g (3.5oz) red onion, peeled and chopped
- 150 g (5.3oz) courgette, diced
- 100 g (3.5oz) yellow pepper, deseeded and diced
- 175 g (6.2oz) aubergine, diced
- 1 clove garlic, crushed
- 1 x 400g can chopped tomatoes
- 200 ml (7fl oz) unsalted vegetable stock
- 1 tbsp tomato puree
- 1 tbsp chopped fresh basil
- 30 g (1.1oz) cheddar cheese, grated
- Put all of the ingredients except the basil and cheese into a saucepan.
- Cover with a lid, bring up to the boil, then simmer for 15 minutes until all the vegetables are soft.
- Add the basil then blend everything until smooth.
- Stir in the cheese until it is all melted.
