Southern Pecan Pie

  1. Heat oven to 375F.
  2. Combine flour and salt in bowl; cut in butter with pastry blender or fork until mixture resembles coarse crumbs.
  3. Stir in enough water just until flour is moistened.
  4. Shape into ball; flatten slightly.
  5. Roll out dough on lightly floured surface into 12-inch circle.
  6. Fold into quarters.
  7. Place dough into 9-inch pie pan; unfold, pressing firmly against bottom and sides.
  8. Trim crust to 1/2 inch from edge of pan.
  9. Crimp or flute edge.
  10. Set aside.
  11. Combine corn syrup, brown sugar, eggs, butter, vanilla and salt in bowl.
  12. Beat at medium speed, scraping bowl often, until well mixed.
  13. Stir in pecans.
  14. Pour into crust.
  15. Bake 50-55 minutes until center is set.
  16. Cool completely.
  17. Top each serving with whipped cream, if desired.
