Cornish Game Hens Stuffed with Lebanese Dressing

  1. Preheat oven to 325F
  2. Saute the yellow onion, chopped, in the butter.
  3. When tender, add the rice.
  4. Continue to saute until rice is barely brown.
  5. Add to rice mixture the water, cinnamon, allspice and salt.
  6. Simmer rice mixture until water is mostly absorbed.
  7. Stuff the four hens with this mixture.
  8. Bake at 325F for about 60 minutes.
  9. After removing from oven, let sit for a few minutes, and then split the hens with a sharp knife into two symmetrical halves for serving.
