Big Old Fashioned Oatmeal Cookies
- 1 cup butter flavor shortening
- 1 cup brown sugar, firmly packed
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 12 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 14 teaspoon baking soda
- 2 cups old fashioned oats
- 1 cup unsalted sunflower seeds, roasted
- 13 cup sesame seeds, lightly toasted
- 12 cup fancy sweetened coconut
- 1 cup golden raisin
- Heat oven to 350 degrees F
- In the bowl of an electric mixer combine shortening and sugar.
- Beat at medium speed until well blended.
- Beat in eggs and vanilla.
- In a medium bowl combine flour, salt, baking powder, cinnamon and baking soda.
- Mix into creamed mixture at low speed until blended.
- Stir in oats, sunflower seeds, sesame seeds, coconut and raisins with spoon.
- Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheets lined with parchment, and flatten with fork -- 6 to a sheet, these expand and are large.
- Bake for 10 to 13 minutes, or until lightly browned.
- Remove immediately to cooling rack.
