Meatball Stew
- 1 each meatballs
- 4 carrots peeled and cut into pieces
- 2 each celery stalks cut into pieces with strings removed
- 3 each potatoes pared and cubed
- 16 ounces tomatoes
- 1 teaspoon salt
- 1 teaspoon beef stock
- 18 teaspoon black pepper
- 1 each bay leaves
- 3/4 cup water
- Prepare basic meatballs except -- cook in a Dutch oven.
- Drain off excess fat.
- Add the remaining ingredients and heat to boiling.
- Reduce the heat, cover and simmer, stirring occasionally, until the vegetables are tender, about 40 minutes.
- Remove the bay leaf and serve.
