Fabulous Lamb Stew
- 12 cups water
- 3 lbs lamb, stew bones with some meat on them
- 2 large marrow, bones
- 1 large onion, diced
- 6 stalks celery, diced
- 4 large garlic cloves, minced
- 1 large potato, small cubes
- 1 cup navy beans, soaked in water over night
- 28 ounces tomato puree
- 28 ounces whole canned tomatoes, cut in quarters
- 13 cup canola oil
- salt and pepper
- In a large pot place the 12 cups of water, the lamb and marrow bones.
- Bring to a boil and then lower flame and simmer for 1 1/2 hours.
- In a separate pan saute the onion and celery in the canola oil for about 10 minutes.
- Then add the garlic and saute for a few more minutes.
- Set aside.
- After the bones have been simmering for 1 1/2 hours add the sauteed veggies plus the rest of the ingredients including the salt and pepper and simmer for 1 1/2 more hours.
