Healthy Baked Chicken Fingers
- 1/4 cups Flax Seed (ground)
- 1/4 cups Oat Bran
- 1/4 cups Parmesan Cheese, Grated
- 1/2 cups Whole Wheat Bread Crumbs
- 2 Tablespoons Italian Seasoning
- 1 Tablespoon Garlic Powder
- 2 teaspoons Salt
- 2 teaspoons Pepper
- 3 Eggs
- 1/2 cups Lemon Juice
- 4 whole Boneless, Skinless Chicken Breasts, Cut Into Strips
- Preheat oven to 350 degrees F.
- Combine the dry ingredients with the spices (ground flax seed through pepper on the above list).
- Set aside.
- In another bowl, whisk the eggs with the lemon juice.
- One strip at a time, dip chicken in the eggs, then in the dry mixture and place on a parchment paper lined baking sheet.
- Bake for 20-30 minutes until golden brown.
- Then place under broiler for 5-10 minutes to get them crispy!
