Healthy Baked Chicken Fingers

  1. Preheat oven to 350 degrees F.
  2. Combine the dry ingredients with the spices (ground flax seed through pepper on the above list).
  3. Set aside.
  4. In another bowl, whisk the eggs with the lemon juice.
  5. One strip at a time, dip chicken in the eggs, then in the dry mixture and place on a parchment paper lined baking sheet.
  6. Bake for 20-30 minutes until golden brown.
  7. Then place under broiler for 5-10 minutes to get them crispy!
