Chunky Peanut Biscuits
- 125g butter, softened
- 1/3 cup KRAFT* Super Crunchy Peanut Butter
- 3/4 cup brown sugar
- 1 egg, lightly beaten
- 1 cup gluten free flour
- 1 cup rice flakes
- 1/2 cup chopped dried figs
- 1/2 teaspoon bicarbonate of soda
- Beat the butter, peanut butter and sugar until pale and creamy, add the egg until well combined.
- Fold through the flour, rice flakes, figs and bi-carb soda.
- Spoon tablespoon measures onto a lined oven tray and bake at 180 degrees C for 12-15 minutes.
- Allow to cool slightly, remove to a wire rack to cool completely.
- Tip: Other dried fruits can be used in place of the figs, i.e.
- sultanas and dried apricots.
