Swiss Green Beans
- 4 tablespoons butter
- 4 teaspoons onions, grated
- 2 tablespoons flour
- 12 teaspoon salt
- 14 teaspoon pepper
- 12 lb sliced mushrooms
- 12 small green pepper, chopped (optional)
- 1 tablespoon sugar
- 1 cup sour cream
- 8 ounces swiss cheese, grated
- 2 (15 ounce) cans green beans, drained or 2 lbs frozen green beans, cooked until barely tender and drained
- 12 cup buttered bread crumb (optional)
- Preheat oven to 350 if you're going to bake this right away.
- Saute onion, green pepper and mushrooms in butter for 5 minutes.
- Blend in flour, salt, pepper and sugar.
- Stir in sour cream, do not boil.
- Stir in beans and cheese, put in a greased casserole.
- Sprinkle crumbs on top.
- Bake for 20 minutes or until golden and bubbly.
