Andes Mint Cheesecake Recipe
- 2 pkt junior mints (3-ounce.)
- 3 pkt cream cheese (8-ounce. ea.) softened
- 2/3 c. sugar
- 3 x Large eggs
- 1 tsp vanilla extract
- 1 x graham cracker or possibly chocolate crumb crust
- Put mints in freezer and freeze.
- Heat to 350 degrees.
- Mix cream cheese and sugar till smooth.
- Add in Large eggs, one at a time beating after each.
- Fold in vanilla.chop frzn junior mints and sprinkle on cheesecake.
- Bake 40-45 min or possibly till set.
- Cold.
- Then refrigerateover night.
