Garbanzos and Couscous
- 1 can (15 oz.) garbanzo beans, drained
- 1 can (14 oz.) diced tomatoes
- 1 cup chicken broth
- 1 onion, chopped
- 3 carrots, chopped
- 3 cloves garlic, minced
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1 tsp. cumin
- 1/2 tsp. turmeric
- 1/4 tsp. cayenne pepper
- 1-1/2 cup cooked couscous
- Combine all ingredients except cousous in crock-pot.
- Cover.
- Cook on low 6-8 hours or high 3-4 hours.
- Add couscous during last 15 minutes of cooking.
