Iced Lemon Cava Cocktail

  1. In a container fitted with a tight lid, combine the sugar and 1/4 cup plus 1 tablespoon water.
  2. Cover and shake for 3 minutes.
  3. Let rest, then shake again for 30 seconds.
  4. Transfer to a small pitcher.
  5. Stir in the lemon juice, then the cava.
  6. Fill 4 tall, narrow half-cup tumblers with crushed ice.
  7. Pour in enough of the cava mixture to just cover the ice.
  8. Garnish with fresh mint.
