Tempura Walleye Sliders with Onion Rings Recipe desnick
- hime brand tempura batter mix
- 1 pound fresh walleye
- a handful of micro greens, arugala, spring greens mix, mizuna, etc.
- 1 small can of chipotle peppers in adobo sauce
- 1 lemon or lime
- 1 cup of mayonnaise
- 1 bottle of very cold sparkling water or light beer
- 2 or 3 big onions sliced thick and separated in rings
- 1 avocado cubed
- enough vegetable, canola or other neutral oil to submerge your onions and fish
- 6 small buns or tortillas
- get your oil on a medium heat so it starts to heat up while you get everything ready.
- organize all of your vegetables, wash your lettuce, cube your avocado and sprinkle half the lemon on it.
- add the mayonnaise, 2 or 3 chipotle peppers (more if you want it spicier), a squeeze of lemon and some freshly cracked black pepper to a blender.
- 4. cut up the fish fillets in big strips.
- read the back of the tempura box and follow the directions for making the batter.
- if you have a frying thermometer you want your oil between 350 and 400 degrees.
- If you dont have a thermometer take a small onion dip it in the batter and drop it in the oil.
- If it starts bubbling up and frying right away you know your good.
- If it fizzles and seems to not react much to the oil wait another minute for the oil to get hotter.
- once you have your oil figured out fry all the onion rings for 2 to 3 minutes and let them dry off on paper towels and sprinkle them with a little salt when their still hot.
- then fry your fish which should cook in 3 to 4 minutes.
- put your fish on the paper towels and sprinkle them with salt.
- toast your buns or tortillas in a pan with some butter.
- put your chipotle mayo, lettuce, avocado and fish on the bun.
- If you feel like frying anything else up while youve got the tempura batter and oil go for it.
- You can literally get as creative as youve want Ive fried avocado and thin slices of lemon.
