Whipped Sweet Potatoes with Honey

  1. Preheat oven to 350F.
  2. Pierce sweet potatoes all over with fork.
  3. Place potatoes on rimmed baking sheet.
  4. Roast until potatoes are very soft, about 1 hour 45 minutes.
  5. Remove potatoes from oven and let stand until cool enough to handle.
  6. Peel potatoes and place flesh in mixing bowl; add butter.
  7. Using electric mixer, beat until mixture is fluffy and smooth.
  8. Mix in 2 tablespoons honey.
  9. Season to taste with salt and pepper and more honey by teaspoonfuls, if desired.
  10. Transfer sweet potatoes to serving bowl.
  11. DO AHEAD: Can be made 2 hours ahead.
  12. Let stand at room temperature.
  13. Rewarm in microwave until heated through before serving.
