Crispy Chicken BLT Salad
- 4 boneless skinless chicken breasts (1 lb./ 500 g)
- 1 pouch Shake'N Bake Extra Crispy Original Coating Mix
- 6 cups torn mixed red and green leaf lettuce
- 1 cup tomato wedges (about 1 medium) Safeway 1 lb For $1.29 thru 02/09
- 4 slices bacon, cooked, crumbled Rite Aid 2 For $7.00 thru 02/06
- 1/4 cup Kraft Rancher's Choice Dressing
- 1/2 cup Cracker Barrel Shredded Old Cheddar Cheese
- Preheat oven to 400 degrees F. Coat chicken with coating mix as directed on package; place in shallow baking pan.
- Bake 20 min.
- or until cooked through (170 degrees F).
- Let stand 5 min.
- ; cut into slices.
- Toss lettuce with tomatoes, bacon and dressing.
- Spoon evenly onto four plates; sprinkle with cheese.
- Top with chicken.
