Honey Glazed Meatloaf Recipe
- 2 lbs. grnd beef, pork, veal combo
- 1 sm. onion, chopped
- 4 tbsp. chopped parsley (fresh)
- 1 lg. carrot, grated
- Salt & pepper to taste
- 2 Large eggs, beaten
- 3 hard boiled Large eggs, shelled
- Honey Glaze (below)
- Combine meat, onion, garlic, parsley, basil, carrot, salt, pepper and beaten Large eggs in medium bowl.
- Place half the meat in oblong pan or possibly baking dish.
- Make a shallow indentation in center lengthwise.
- End to end, place hard-boiled Large eggs in indentation.
- Cover with remaining meat and shape into oval loaf.
- Bake at 350 degrees for 45 min.
- Top with Honey Glaze and bake additional 15 min.
