Bologna Cups
- 1-13 cup Rice
- 1/2 cups Ketchup
- 1 Tablespoon Vinegar
- 1 Tablespoon Oil
- 2 teaspoons Worcestershire Sauce
- 1/2 teaspoons Sugar
- 8 slices Regular Bologna (low-fat Will Not Cook Into Cup Shapes)
- 1 Tablespoon Shortening Or Oil
- 4 slices American Cheese, Halved
- Cook rice according to package directions.
- In a medium saucepan, stir together ketchup, vinegar, 1 tablespoon oil, Worcestershire, and sugar.
- Mix into the cooked rice.
- Preheat broiler, if preheating is required.
- In a skillet over high heat, in melted shortening 1 tablespoon of oil, fry bologna on one side until cup-shaped; turn and brown the other side.
- Spoon rice mixture into bologna cups.
- Top with half of a cheese slice and broil till cheese is bubbly.
