Frosty Strawberry Squares
- 1 c. flour
- 1/2 c. melted butter
- 1/4 c. brown sugar
- 1/2 c. chopped pecans
- 4 egg whites
- 1 c. sugar
- 2 (10 oz.) pkg. frozen strawberries, thawed
- 1 pt. whipping cream
- 2 Tbsp. lemon juice
- Mix the flour, butter, brown sugar and pecans together. Crumble on a rimmed cookie sheet and brown in oven; set aside. Beat egg whites; add sugar, gradually, while continuing to beat until stiffens.
- Then stir in the thawed strawberries mixed with lemon juice.
- Whip the cream until stiff and fold into strawberry mixture.
- Sprinkle all but 1/4 cup of pecan mixture in bottom of a 9 x 12 x 2 1/2-inch pan.
- Drop strawberry mixture on top by spoonfuls and gently spread until even.
- Sprinkle remaining pecan mixture on top.
- Freeze.
- Will keep two weeks in freezer.
