Quatre Epices

  1. Thoroughly grind and mix the spices together.
  2. Sometimes cinnamon is used instead of the ginger and sometimes allspice is used instead of the white pepper depending on the region.
  3. Also the amounts of each of the spices may vary depending on the region.
  4. I have seen this mixture used to flavour certain kinds of sausage.
