Key Lime Shortbread Cookies

  1. Combine flour, powdered sugar and cornstarch in bowl.
  2. Set aside.
  3. Beat butter in large bowl at medium speed until creamy.
  4. Add flour mixture and all remaining cookie ingredients; beat at low speed until dough forms.
  5. Shape dough into 2 (10-inch) logs on lightly floured surface.
  6. Wrap each in plastic food wrap; refrigerate 2 hours or until firm.
  7. Heat oven to 350F.
  8. Reshape logs, if necessary.
  9. Cut into 1/4-inch slices with sharp knife.
  10. Place 1 inch apart onto ungreased cookie sheets.
  11. Bake 9-11 minutes or until edges are lightly browned.
  12. Cool 1 minute on cookie sheet; remove to cooling rack.
  13. Cool completely.
  14. Place powdered sugar and 1 teaspoon lime zest in bowl.
  15. Gradually stir in enough lime juice for desired glazing consistency.
  16. Spoon or brush glaze on top of cookies.
  17. Let stand until glaze is hardened.
