Baked Halibut With Coconut And Cashews Recipe
- 1 lb Halibut fillets finely minced
- 1/3 c. Vegetable oil
- 1 c. Grated fresh coconut
- 1 lrg Onion finely minced
- 2 x Garlic cloves finely minced
- 2 x Canned mild green chiles minced
- 1/2 tsp Salt
- 1 tsp Curry pwdr
- 2 Tbsp. Unsalted cashews minced
- 1 Tbsp. Lemon juice
- 2 x Large eggs lightly beaten
- Saute/fry coconut in 1 Tbsp.
- oil till lightly browned.
- Saute/fry onion in remaining oil till tender but not browned.
- Add in garlic, chiles, salt, and curry pwdr and cook, stirring, 2 min.
- Add in coconut, nuts, and halibut.
- Cook 2 min.
- Cold slightly.
- Mix lemon juice with Large eggs and add in to skillet.
- Divide halibut mix among 6 oiled 7-inch squares of aluminum foil.
- Wrap tightly and place on a baking sheet.
- Bake at 375 degrees for 20 min.
- This recipe serves 6.
