Creme Cheese Fruit Cake Recipe
- 1 (8 ounce.) pkg. cream cheese
- 1 3/4 c. sugar
- 3 c. sifted flour
- 3/4 teaspoon salt
- 1 c. white wine
- 2 c. candied fruits
- 1/2 c. minced almonds
- 1/3 c. shortening
- 6 egg whites
- 4 teaspoon baking pwdr
- 3/4 c. lowfat milk
- 1 teaspoon vanilla
- 1/2 c. candied cherries
- 1/2 c. flour
- Cream the cream cheese and shortening.
- Add in sugar and cream till light and fluffy.
- Add in egg whites one at a time, beating well after each.
- Sift together dry ingredients.
- Combine lowfat milk, wine and flavoring.
- Add in sifted dry ingredients to the creamed mix alternately with liquid.
- Add in 1/2 c. flour to nuts and canned fruit, then fold into cake batter.
- Bake in 2 well-greased loaf pans at 275 degrees for 1 hour.
- 2 loaves.
