Tropical Icy Poles (Popsicles or Ice Lollies)

  1. Combine water and sugar in a saucepan and stir over low heat to dissolve.
  2. Bring to boil, stirring, for ten seconds.
  3. Remove from heat.
  4. Add coconut cream and juices and stir well.
  5. Allow to cool completely, stirring from time to time to recombine coconut cream.
  6. When cooled completely, pour into moulds and insert sticks.
  7. Freeze until solid.
