Wild Rice-Sweet Potato Salad With Pears

  1. For salad, bring water to a boil in a medium saucepan.
  2. Add wild rice, reduce heat, cover, and simmer 1 hour or until tender.
  3. Set aside.
  4. Cook sweet potato in boiling water 5 minutes or until tender.
  5. Drain and rinse under cold water.
  6. Set aside.
  7. Combine pear and lemon juice in a large bowl and toss to coat.
  8. Add cooked wild rice, sweet potato, pepper, onions, sesame seeds, and salt.
  9. Toss together.
  10. For dressing, combine vinegar, apple cider, sesame oil, orange juice concentrate, sage and garlic in a small bowl and whisk well.
  11. Pour over rice salad and toss to coat.
