Kerry's chocolate eclairs

  1. Preheat oven to 180C
  2. In a pot, bring milk, butter and water to the boil
  3. Add dry ingredients and mix until a ball is formed
  4. Take of heat and allow to cool to room temperature
  5. Once at room temperature, add eggs one at a time mixing in well after each one is added
  6. Pour mixture into a piping bag and pipe onto greased baking tin.
  7. Make sure you space them enough as they rise quite a bit.
  8. You can smooth the edges with your fingers dipped in a bit of water
  9. Bake for 25 mins
  10. Take out and reduce oven to 160C.
  11. Cut the eclairs down the side and place back into 160C oven for another 5
  12. Melt cooking chocolate for the topping
  13. Whip cream and sugar until stiff and it forms peaks
  14. Take out eclairs and allow to cool
  15. Pipe whipped cream into cooled eclairs
  16. Dip/spread chocolate on top
  17. Its best to keep them in the fridge so that the cream doesn't melt
  18. Enjoy!
