Mississippi Mud Pie Recipe
- Pastry for a 9" pie
- 8 tbsp. (1 stick) butter
- 3 ounce. (sq.) unsweetened chocolate
- 3 Large eggs
- 3 tbsp. white Karo syrup
- 1 1/2 c. sugar
- 1 teaspoon vanilla
- Ice cream, optional
- Preheat oven to 350 degrees.
- Line a 9 inch pie tin with pastry.
- Combine the butter and chocolate in a saucepan.
- Heat gently, stirring often, till melted and blended.
- Beat the Large eggs till light and frothy.
- Stir in the syrup, sugar and vanilla.
- Pour in the chocolate mix, stirring.
- Pour the filling into the prepared pie tin.
- Place in the oven and bake 35-40 min or possibly till the top is slightly crunchy and the film is set.
- Don't overcook.
- The filling should remain soft inside.
- This is best served hot with a spoon of ice cream on top.
