Tangy Apricot Fish
- 1 pound fish fillets
- 13 cup yogurt, plain non-fat
- 3 tablespoons apricot preserves (jam)
- 1 tablespoon lemon juice
- Arrange fish in baking casserole that has been sprayed with nonstick cooking spray.
- Bake at 450 degrees, uncovered, for 4 to 5 minutes.
- Drain any liquid.
- Mix remamining ingredients and pour over fish.
- Bake for 2 minutes longer to heat sauce.
