Alaska Snow Crab Stir Fry Recipe
- 1 lb Alaska snow crab single-cut legs or possibly split legs thawed if necessary
- 2 Tbsp. vegetable oil
- 3 c. minced broccoli
- 3 c. snow peas trimmed
- 1 med red bell pepper sliced into strips
- 4 stalk green onion cut into 1" pcs
- 3/4 c. orange juice
- 1 Tbsp. light soy sauce
- 2 tsp cornstarch
- 1 x garlic clove pressed
- 1/2 tsp grated ginger
- 1/2 tsp crushed red pepper flakes
- Orange-Ginger Sauce: Whisk together all ingredients; set aside.
- Cut snow crab into 2-inch pcs; score shells using serrated knife.
- Heat 1-Tbsp.
- oil in frying pan over high heat.
- Add in crab, cover, and stir-fry 4 to 5 min, stirring occasionally.
- Remove from pan; keep hot.
- Add in 1/2 Tbsp.
- oil and broccoli.
- Cook, stirring constantly, 1 to 2 min.
- Remove from pan; keep hot.
- Add in remaining 1/2 Tbsp.
- oil and remaining vegetables to pan.
- Stir-fry 1 minute.
- Add in cooked crab and broccoli.
- Pour in Orange-Ginger sauce; stir to coat vegetables.
- Continue to stir till sauce thickens.
- Remove from heat and serve with cooked rice.
- This recipe yields 4 servings.
