Fluffy Potato Cakes
- 2 Potatoes
- 1/2 Onion
- 5 Green onions or scallions
- 2 Chikuwa
- 1 Egg
- 100 ml Plain flour
- 1 dash Salt and pepper
- 1 Ketchup
- 1 Mayonnaise
- Cut the green onions into small pieces and thinly slice the chikuwa.
- Grate the potatoes and onion.
- Put into a bowl, add the egg and flour and mix together.
- Add Step 1, the salt, and the pepper.
- Mix together.
- Put about 1 cm of oil in a frying pan and turn the heat up to medium.
- Put a ladle of Step 2 into the frying pan, shape into a patty, and slowly fry on both sides until crispy.
- Transfer to a plate and top as you like with ketchup and mayonnaise.
