Crispy Oat Cookies Recipe
- 1 c. butter
- 1 c. sugar
- 1 c. brown sugar, firmly packed
- 1 egg
- 1 c. vegetable oil
- 1 teaspoon vanilla
- 3 1/2 c. all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 c. regular oats (uncooked)
- 1 c. cornflakes, crushed
- 1/2 c. flaked coconut
- 1/2 c. pecans, minced
- Cream butter; gradually add in the sugars, beating well at medium speed of an electric mixer.
- Add in egg and beat well.
- Add in oil and vanilla, mixing well.
- Combine flour, baking soda and salt.
- Add in to creamed mix; mix well.
- Stir in oats and the remaining ingredients.
- Shape dough into 1-inch balls.
- Place on ungreased cookie sheets.
- Flatten each ball with the tines of a fork.
- Bake at 325 degrees for 15 min.
- Cold slightly, remove from cookie sheets and cold on wire racks.
- Yield: 10 dozen.
