Roasted Beet Salad
- 1 beet, trimmed and scrubbed
- 12 peach, pitted and chopped
- 1 teaspoon red wine vinegar
- Put beet in microwave safe dish (cover with several layers of paper towel) and microwave on HIGH for 8-10 minutes.
- Let cool and rub off skin; slice into about 15 pieces.
- Toss beets with peach.
- Drizzle vinegar overtop.
- Enjoy!
