Roasted Beet Salad

  1. Put beet in microwave safe dish (cover with several layers of paper towel) and microwave on HIGH for 8-10 minutes.
  2. Let cool and rub off skin; slice into about 15 pieces.
  3. Toss beets with peach.
  4. Drizzle vinegar overtop.
  5. Enjoy!
